Ven Pongal
A white colored pongal (though it could also be yellow) is a savory dish that is not only a tradition during the harvest season, but also a daily hot breakfast cereal for many people in South India.
Ingredients; - Millet or Rice 1 cup - Mung beans: ½ cup - Black pepper: 1 teaspoon - Cumin seeds: 1 teaspoon - Turmeric: ½ teaspoon - Ginger: a chunk cut into small pieces (1 tablespoon) - Ghee: ¼ cup (vegans can substitute olive oil for ghee) - Cashews: ¼ cup, roasted - Salt to taste
Method:
Step 1. Dry saute the black pepper and cumin. Grind it coarse and set aside.
Step 2. Dry fry the mung beans slightly and then wash it. Add 5 cups of water and cook the mung and the millet or rice together along with turmeric.
Step 3. Now add the chopped ginger, the ground up spice and salt.
Step 4. Add olive oil or ghee and mix well.
Step 5. Remove from heat and garnish with cashews.
